Ingredients
- 2 pounds boneless chicken thighs, cut in big chunks for skewers
Marinade Ingredients:
- 1/2 cup plain yogurt
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1 1/2 tablespoons granulated garlic
- 1 tablespoon cumin
- 2 teaspoons ground coriander
- 2 teaspoons paprika
- 1 ½ teaspoon ground turmeric
- ½ teaspoon cayenne (double this if you like a little heat)
- ½ teaspoon ground ginger
- ½ teaspoon ground clove
- ¼ teaspoon ground cardamom
- 1 teaspoon sea salt
Instructions
- In a medium bowl combine all marinade ingredients together. Add the chicken and let marinate for at least 20 minutes or up to a day.
- If using wood skewers, soak in water 30 minutes to prevent burning.
Preheat grill to med-high heat. Make sure the grate is cleaned and very well greased. - Sear the chicken for 4-5 minutes or until good grill marks appear. Resist the urge to move them early, or too much or you will lose the delicious yogurt crust. Once it’s well seared it will naturally release itself a little from the grill.
- Use a metal spatula to help turn the skewers. Once both sides have grill marks, turn the grill down, or move to a cooler part of grill and cover – or alternatively, finish cooking in a 350º F oven until meat is cooked through.
Raita Recipe Ingredients
- ¾ cup whole milk plain yogurt
- ½ cup grated cucumber (remove seeds first)
- 3 tablespoons chopped mint
- 2 tablespoons finely chopped red onion
- 1 tablespoon olive oil
- 1 tablespoon lemon or lime juice
- ½ teaspoon ground cumin
- ½ teaspoon ground coriander
- ¼ teaspoon salt, or to taste
- ¼ teaspoon pepper, or to taste
Instructions for Raita:
- Place all ingredients in a bowl and stir. Refrigerate until ready to serve.
Mango Lassi Ingredients
- 1 1/2 cups chopped very ripe mango (or canned mango pulp)
- ¾ – 1 cup plain yogurt
- ½ cup milk
- 1 TBS sugar
- A dash or two of ground cardamom
- Ice (optional)
- Mint garnish
- Add all ingredients to blender. Blend, taste it, and then adjust ingredients to taste.
